Substitutions:

Flour– You can easily substitute the oat flour with regular wheat flour (atta) or all-purpose flour (maida) depending on what you have in your pantry.
Enhance the Sweetness:
Option#1: Since there is zero processed sugar, adding a splash of vanilla extract or a handful of sugar-free dark chocolate chips will make the cake feel much more indulgent without adding sugar spikes
Option#2: You can blend 20–30 grams of warm-water-soaked dates into the mashed banana to boost the natural sweetness safely.
Customize- Feel free to customize it with a handful of crunchy walnuts, mixed nuts, or chocolate chips folded into the batter or sprinkled on top for an extra touch of indulgence!

Tips for Making Soft and Moist Sugar-Free Banana Cake:

Using over-ripe bananas and oat flour gives this homemade sugar-free cake a naturally sweet flavor and a tender crumb. A few simple steps help you get the best texture while keeping the preparation quick and easy.
1. Choose truly over-ripe bananas:Use bananas that are heavily speckled or browned on the peel. The riper the banana, the sweeter and more flavorful your cake will be without needing any added sugar, while also making them much easier to mash thoroughly. Ripe bananas skin turning brown - perfect for baking
2. Whisk wet ingredients well:Vigorously whisk the mashed banana, egg, melted butter (or applesauce), and milk until completely uniform. This creates a smooth base that evenly distributes the moisture and fat throughout the batter.
3. Avoid overmixing the oat flour
When folding in the oat flour, baking powder, baking soda, cinnamon, and salt, use a spatula to stir gently just until the flour disappears. Overmixing can make the oat flour dense rather than light.
4. Check that the cake is baked through:
Baking time depends on your oven and pan size. Follow the recipe guidelines and insert a toothpick into the center of the cake; if it comes out clean, it is ready to come out of the oven.

Notes

  •  Enhance the Sweetness: Since there is zero processed sugar, adding a splash of vanilla extract or a handful of 60% or 70% dark chocolate chips will make the cake feel much more indulgent without adding sugar spikes.
  • If Your Banana Isn’t Fully Brown: If the banana is yellow rather than heavily spotted, it won’t be very sweet on its own.
  • You can blend 20–30 grams of warm-water-soaked dates into the mashed banana to boost the natural sweetness safely.
