Ingredients

  • over-ripe banana -* 130g thoroughly mashed
  • egg -1 large
  • Melted butter-25g
  • milk-2 tbsp
  • *Oat flour -85g
  • baking powder -½ tsp
  • baking soda -¼ tsp
  • ground cinnamon - ¼ tsp optional, for flavor
  • A pinch of salt

Equipment

  • 1 baking pan
  • measuring equipments

Method

  1. Prep the Oven & Pan: Preheat your oven to 175°C (350°F). Grease a small 6-inch cake pan or line it with parchment paper.
  2. Whisk the Wet Ingredients: In a mixing bowl, vigorously whisk the 130g mashed banana, egg, butter, and milk until uniform.
  3. Add the Dry Ingredients: Sift in the flour, baking powder, baking soda, cinnamon, and salt. Stir gently with a spatula just until the flour disappears—do not overmix.
  4. Bake: Pour the batter into your prepared pan. Bake for 20 to 25 minutes. A toothpick inserted into the centre should come out clean.
  5. Cool: Let it cool in the pan for 5 minutes, then transfer to a wire rack to cool completely

Notes

  •  Enhance the Sweetness: Since there is zero processed sugar, adding a splash of vanilla extract or a handful of 60% or 70% dark chocolate chips will make the cake feel much more indulgent without adding sugar spikes.
  • If Your Banana Isn't Fully Brown: If the banana is yellow rather than heavily spotted, it won't be very sweet on its own.
  • You can blend 20–30 grams of warm-water-soaked dates into the mashed banana to boost the natural sweetness safely.
