Ingredients
  

  • 120 g fresh blueberries about 1 cup
  • 250 g Greek yogurt or thick hung curd
  • 2 –3 tbsp honey or maple syrup adjust to taste
  • 1 tsp lemon juice
  • A pinch of lemon zest
  • ½ tsp vanilla extract

Method
 

prepare bluberry
  1. In a small saucepan over medium heat, combine blueberries, 1 tbsp honey, and lemon juice. Lightly mash some berries with a fork. Cook for 5–7 minutes until the mixture thickens into a light syrup. Allow it to cool completely.
Yogurt base
  1. In a bowl, whisk together the yogurt, remaining honey, vanilla extract, and lemon zest until smooth and creamy.
Fill and freeze
  1. Pour the mixture into popsicle moulds. Optionally, add a few whole blueberries for texture. Insert sticks and freeze for at least 6 hours or overnight.

Notes

  • Use thick Greek yogurt or hung curd to avoid icy popsicles.
  • Adjust sweetness based on the tartness of your blueberries.
  • Roasting/simmering the berries enhances flavor and gives a rich swirl effect.
