prepare bluberry
- In a small saucepan over medium heat, combine blueberries, 1 tbsp honey, and lemon juice. Lightly mash some berries with a fork. Cook for 5–7 minutes until the mixture thickens into a light syrup. Allow it to cool completely.
Yogurt base
- In a bowl, whisk together the yogurt, remaining honey, vanilla extract, and lemon zest until smooth and creamy.
Fill and freeze
- Pour the mixture into popsicle moulds. Optionally, add a few whole blueberries for texture. Insert sticks and freeze for at least 6 hours or overnight.
Notes
- Use thick Greek yogurt or hung curd to avoid icy popsicles.
- Adjust sweetness based on the tartness of your blueberries.
- Roasting/simmering the berries enhances flavor and gives a rich swirl effect.
