Guacamole – Dip/Spread
This Guacamole is made from Avocado fruit. In India, avocado’s are known as Butter fruit. When we were kids Butter Fruit was a mystery fruit! On its own the fruit has no flavor. We were told to eat it with jaggery but flavor never really caught on. When I moved to Boston, I learned that Mexican way of eating Avocado or Butter fruit is to add lime juice and spices. Now that avocado is found in the market in Madurai too, this is the best time to share our guacamole recipe.

Avocado is a dark green fruit with thick outer skin. It has an inner light green soft flesh and a hard pit the size of a golf ball. Always Use only ripe avocado to make guacamole. When ripe the skin will turn a very dark green (almost black). Cut the fruit and the pit.
Now scoop this beautiful green soft flesh to a bowl and smash with a potato smasher or back of a fork. Leave some chunks for texture.

You can skip the chilly flakes to reduce spice level. Salt and lime/lemon juice is the most important ingredient as they give the base flavor.
Important Tip : Avocado fruit changes color when exposed to air. So do not leave the fruit cut for long. Immediately after smashing add lemon juice and salt.
Shelf Life: Use this dip in 1 to 2 days. Keep chilled in an airtight container.
Serving options:
- This dip goes well with Tortills chips or crackers or cheese quesedilla
- Can be used as a spread between two slices of bread
- Can be used a stuffing in Crispy taco
