Blueberry Popsicle
A simple easy guilt-free recipe your kids will surely love.
Yogurt pops are easy, healthy frozen treats made by blending or mixing yogurt (often Greek for creaminess) with fruit and a sweetener like honey, then freezing in molds for 4–8 hours. Popular combinations include berry-honey, mango, strawberry-banana, or peanut butter. They are nutritious, protein-rich, and customizable.
I love making desserts. But I also love coming up with healthier dessert recipe ideas for my family. Add a little summertime heat wave and enter my homemade yogurt popsicles. You can make them all sorts of ways. Change up the yogurt (although in my opinion you can’t beat the creamy tartness of Greek yogurt) or try different types of fruit for the puree. Add a little agave or honey, and then pop them in the freezer.
Chef’s Tips for the Best Texture
Avoid “Icy” Pops: If you use regular thin yogurt, the high water content can make them crunchy. Stick to Greek yogurt or full-fat yogurt for a “velvety” bite.
Just simple ingredients blueberry, yogurt, honey, vanilla extract and lemon.

In a small saucepan over medium heat, simmer the blueberries with 1 tablespoon of honey and the lemon juice. Use a fork to burst a few berries. Cook for about 5–7 minutes until the liquid thickens into a light syrup. Let it cool completely.
In a separate bowl, whisk the yogurt, remaining honey, vanilla, and lemon zest until smooth.


Freeze:
Pour the mixture into popsicle moulds. Insert sticks and freeze for at least 6 hours or overnight.

- Roasting/simmering the berries enhances flavor and gives a rich swirl effect.
